Blhubarb Smoothie

This tastes almost exactly like a green apple, except of course, it’s NOT a green apple: it’s blueberry-rhubarb… or blhubarb! In refreshing, tart, simple and unassuming smoothie mode. (And yes, I know ‘bluebarb’ looks nicer as that’s what others will call it… but I couldn’t resist, darn it.)

Ingredients:

  • 1 cup fresh blueberries
  • 1 cup frozen rhubarb stalk, cut into small chunks
  • 1 cup unsweetened cashew milk (or nut milk of your choice)

Special equipment: high-speed blender

Yields: 1 serving
Prep time: 5 minutes

Preparation: Blend together all ingredients in a high-speed blender until smooth; pour into a cup and enjoy!

Perfect when you want a very fresh, crisp, light drink for a hot day that’s not too sweet. Also, you KNOW I couldn’t resist making a blueberry meets rhubarb smoothie, just for the name alone. :3 Which, on the subject of the quirky name? It turns out the name’s not original, BUT leaving out excess sugar and starch along with said blueberries and rhubarb unfortunately seems to be at the time of this writing.

So, here’s my two cents unto leaving said additions out: I find it’s only when you DON’T add sweeteners, after all, that you DO get to appreciate something for what it is when it’s not really about being deeply sweet all the time. And in this case, that is mild, light, and airy-watery in a smoothie.
