An absolutely delightful, chilled soup for the summer. Buttery-melon sweetness, mild watery coolness, robustly hot and sharp garlic, and zesty lime juice and salt all come together to make a balanced happy dish!


  • 1 cup mixed chilled melon medley chunks of cantaloupe, watermelon, honeydew (***I used store bought pre-cut melon chunks to save time)
  • Juice from 1 key lime (about 1 Tbsp)
  • 1/2 cup fresh mint leaves
  • 1-2 raw garlic cloves (about 1 Tbsp)
  • 1/2 Tbsp olive oil
  • Salt and pepper to taste

Special equipment: high-speed blender or food processor

Prep time: 5 minutes
Yields: 1 serving

Preparation: blend all ingredients together until completely smooth, then pour into a bowl and enjoy! (Optionally garnish with an extra mint leaf or two if you like for aesthetic effect. 😉 )
