Zappy Curry Turnips

Warm and zesty, quick and colorful… and designed to get you moving with full unwavering drive to what you KNOW you’re here to do!

Ingredients:

  • 1 large turnip, about 2 cups worth
  • 1/2 cup minced parsley (I used store-bought pre-cut parsley to save time)
  • juice from 4 small limes (about 2-3 Tbsp)
  • 1 tsp curry powder
  • 1/2 cup water

Prep time: 15 minutes
Yields: 2-4 servings

Preparation:

  1. Rinse and dice the turnip into small cubes.
  2. Heat the turnip cubes together with the 1/2 cup of water and lime juice in a covered pan for about 10 minutes, until the turnips are soft.
  3. Add the curry powder and minced parsley and continue to cook covered for about 5 minutes, stirring occasionally. Remove from heat, plate your meal, and enjoy the rev-up flavors.
  4. Simmer all of the ingredients together in a covered pan on medium-high heat until the turnips are softened, about 10 minutes, stirring occasionally to evenly disperse the curry powder. Then, plate, and enjoy the rev-up.

Yasmine’s notes:

One bite of this, and I immediately, immediately felt two things— a *spark* of a kick from the tangy, airy lime juice mixing with parsley, and an engine revving up with the peppery-heat of the turnips and warm curry— the fiery roar of being ready to GO. Right into action, straight with the confidence of knowing exactly what I want to do… and getting right to it. Something like Sanji and Miguel of Torus Link each going STRAIGHT for what they want in their goals… and wasting no time in doing so.
