Leftover Refreshing Beef and Sweet Potato Cabbage Wraps

Simple, quick, and does the trick! (With extra-filling pre-frozen sweet potato chunks.)


  • 1 cup leftover pre-cooked Refreshing Beef
  • 1 cup frozen sweet potato chunks
  • 1/4 cup water
  • 1/4 cup chopped red onion
  • 1-2 rinsed napa cabbage leaves, whole
  • salt and pepper to taste

Prep time: 10 minutes
Yields: 1-2 servings


  1. Heat together the Refreshing beef, sweet potato chunks, and 1/4 cup of water in a pan with a lid on medium-high heat for 10 minutes.
  2. Plate the 1 to 2 cabbage leaves (depending on whether you are making 1 or 2 wraps) with red onions, then top with the beef and sweet potatoes. Sprinkle with salt and pepper to taste, and then enjoy!

I am a full proponent of using store-bought, pre-prepared, pre-frozen things whenever you can, as it helps save time to very quickly heat up in a pot or pan and GO. Feel free to pair this combination with any leftover stir-fries you have. In an instant, you have something you can SPEEDILY make that’s filling, fresh, and uses up with you’ve got. Win, win, win!
