Miguel’s Fiery Charge Salad

Eating this salad offers a feeling reminiscent, straight-up, of Miguel’s energy from Torus Link. With the powerful heft of the walnuts, the unapologetically sour zest of lime juice, parsley, and capers combined, and the warming curry powder coming together with fresh lettuce, mildly sweet apples, and papaya… this is a salad for when you are up to tackle a cave filled with a thousand demons to be slain. It’s a ready-to-charge-and-DO-the-thing warrior’s salad.

Ingredients:

  • 2 cups lettuce leaf blend of your choice
  • 1 quarter of a whole papaya (about 1 ½ cup’s worth)
  • 1 small gala apple, rinsed (about ¾ a cup’s worth)
  • ½ cup walnuts
  • 2 Tbsp jarred capers, rinsed thoroughly of excess salt
  • 1 tsp curry powder
  • 1 tsp dried parsley
  • 1/2 tsp white wine vinegar
  • 1/4 tsp cayenne pepper
  • 1/4 tsp garlic powder
  • Juice from 1 lime
  • dash of salt
  • 1 ½ cups water for boiling

Prep time: 15 minutes
Yields: 1 serving

Preparation:

  1. In a small saucepan, boil the water, walnuts, curry powder, parsley, capers, vinegar, cayenne pepper, salt, garlic powder, and lime juice together for 10 minutes.
  2. While the curry-walnut topping is boiling, prep the lettuce and fruit: plate lettuce leaves and peel and remove seeds from the papaya chunk.
  3. Cut and slice the apple and papaya into thin slices and arrange in concentric circles on top of the lettuce leaves, leaving space in the middle for the curry-walnut topping.
  4. Finally, after the topping has boiled for 10 minutes, drain off excess water and add the topping to the center of the plate. Eat, and then… get ready to do ALL the things and GET those ambitions done in your day, just like Miguel!
