Cream of Almond with Stewed Blueberries

This hearty dessert porridge is inspired by the hot-cereal breakfasts my mom would always make for me when I was a child getting ready to go to school… warming, comforting, and what felt like a hug… except now, made with less of what neither of us knew back then would severely damage us to eat. Instead of copious amounts of sugary jams and grains, you only need one small bowl of this to fill you up with healthy amounts of sweet, fruity warmth and buttery nuttiness.

Ingredients:

  • 1/2 cup of water (plus 1/4 additional cup if needed)
  • 1/2 cup of blueberries, fresh or frozen
  • 1/4 cup of blanched almond meal
  • Optional: dash of salt
  • Optional: ***Any additional toppings you like (see notes below)

Prep time: 10 minutes
Yields: 1 serving

Preparation:

1. In a small saucepan, heat the water and berries together on medium high heat for 5 minutes, until mixture begins to boil and berries are completely softened. (Optional– add dash of salt if you prefer a little extra zing versus mildness.)

2. Once mixture is boiling, quickly stir in almond meal, stirring constantly until almond meal is thoroughly incorporated with the water, and the mixture begins to thicken and bubble over the heat, about 2-3 minutes. Immediately remove from heat once thickened.

3. Serve in bowl warm and enjoy!

***This is a meal that, to me, can either be enjoyed in its simplicity– purely for the fruit flavors themselves and almondy creaminess alone– or it can be easily dazzled up with a myriad of toppings based on your preference. Chopped nuts, spices, additional fresh or dried fruit, aromatic herbs? You name it: the sky’s the limit.

For example, I’ve added below 1 tsp of chopped pecans, 1 tsp of pumpkin seeds/pepitas, and roughly 1/4 tsp each of cinnamon, cardamom, nutmeg, and ginger for a very warming, hearty and filling bowl.
