“A-Sharp” Salad

For when you need a SHARP in your salad greens, and not “B-flat.” (Musical-pun for all my musical-nerds; thanks to my dear friend for that one.) But in all seriousness– this salad comes with a SHARP tang that is great for cutting through any sluggish, thick feelings left from a previous stodgy meal.

Ingredients:

Juniper Quick-Pickles:

  • 2 small pickling size cucumbers, sliced (see some varieties here!)
  • 1/2 tsp salt
  • 2 cups white wine vinegar (can substitute red wine vinegar)
  • 1 tbsp crushed dry juniper berries (can substitute black pepper)

“A-Sharp” Salad with Juniper Pickles

  • 1 cup fresh arugula/rocket
  • ½ cup of juniper pickle slices
  • 1 Tbsp juniper pickling liquid and juniper berries from same jar (for a VERY sharp salad, use up to ¼ cup!)
  • ¼ cup chopped pecans
  • ¼ cup julienned carrots
  • ¼ cup jarred, roasted red bell peppers chopped into small pieces
  • ⅓ cup of jarred, salted green/kalamata olives of choice (Can use ¼ cup of rinsed olives for less salt)

Special equipment:

  • Jar and lid for quick pickles

Inactive prep time: 3 hours
Active prep time: 5 minutes
Yields: 1 serving

Preparation:
I. Make the Juniper Quick-Pickles:
Fill a clean jar with all of the listed ingredients, stirring a few times to help dissolve the salt. Seal with a lid and chill for at least 3 hours in fridge: can last refrigerated safely up to 1 week.

II. Make the salad:
Place all ingredients into a bowl as listed, toss, and eat!

Yasmine’s notes:
I came up with this salad specifically after trying to create my own kind of “turnip cake” maximized for heart-health… that simply landed as turnip MUSH. It was, dare I say, ~survivable~ as a taste… but I am not ashamed to admit that I nearly gagged and threw up with each spoonful. Thus did I come up with this palate-cleansing salad right after! 😀 If you need something to cleanse your own palate, this salad is for you. My suggestion is to DRINK A LOT OF WATER WITH THIS and be prepared for much sharpness in your throat— a good kind.
